What’s better than an avocado? A baked one with CHEESE!

Over the summer, I had dinner at the lovely Oswego Lake House, wherein the service was awful, but I was served something delicious. Now, I can’t remember EXACTLY what was in this delightful dish – but I tried it anyway.

Behold, Baked Avocado

Here’s what I want you to do (does it bug the you know what out of you when Sandra Lee says this, cause it does me).

Go ahead and halve an avocado. Remove the pit.
Dice up some Roma Tomatoes (or whatever type you have)
Drizzle said tomatoes with balsalmic vinegar
Sprinkle some Italian Herbs on there (I used dried, but would have used fresh, if I had it).
Put mixtuer in avocado
Sprinkle with Grated Mozzarella Cheese
Bake at 350 for 20 minutes
Drizzle with more balsalmic (I really love balsalmic vinegar).

    I’m sure it was lovely.

    Did you know that I don’t like avocados, tomatoes, or vinegar? So um don’t make this dish for me when I come to visit ok? Just bring out the cheese and we’ll eat that instead.

        oooooh do I love avocado, even though I saw the picture before reading the words and was all “what the FFFFF is THAT?” Now I get it. It takes me some time…
