Greetings from Kidney Watch: Day 2! Here I am, on my couch, still with no remote batteries. I will be watching channel 8 all day. Unless I can train the cat to change the channel, but I think I’d sooner see hell freeze over.
Yesterday, at my doctor’s appointment, I was weighed. I found this completely unnecessary and tried to close my eyes when the nurse wrote the number down. But, I peeked. And, I weigh 8 pounds more than I did at my annual exam in February.
I know exactly where the weight gain has come from: I have been living on frozen waffles and french bread pizza. This has got to stop. I used to cook, I love to cook. But, my problem lies with this: most recipes I try are for 4 or more servings. It’s nice to have leftovers, but I really cannot eat something more than twice, I get sick of it and tend to never want to eat whatever it was again.
So, here’s how I am going to remedy this. Once a week, at least, I am going to try a recipe that makes one or two servings. Then, I’m going to share it with you here. Cause, I’m pretty sure there are lots of single girls out there who may have this same problem.
But first, I need your help. Do you have a favorite recipe you’d like to share with me that serves 1 or 2? That can easily be whipped up after work?
I already subscribe to Martha Stewart Everyday Food, which is an awesome little magazine that has many recipes that fit this bill. I think tonight? I’ll try this: Herb Rubbed Salmon Steak. I have all the ingredients on hand, except the zucchini, which I can easily run down to the store and grab. Wish me luck!

I feel the same way! I don’t mind eating it for a few days, but the whole week of the same dinner it not good. I think that’s why I don’t cook as much. So I am excited about this!
I have a great Asian beef noodle recipe that is 2 servings that is good. If I can find it, I’ll email it to you!

Ooh, I think I may take cue from you, this is a good idea!
I make a Greek pasta salad that I have for dinner and then bring the leftovers for lunch the next day. It’s nice and light, especially when it’s too hot outside to cook. Which happens um … for like a week in the summer.
1 cup of dried pasta cooked to al dente.
1/2 a chopped tomato
1/4 of a chopped red bell pepper
3 or 4 pepperoccinis (sp?) sliced
1/2 a cup diced english cucumber
Toss with 2 T balsamic dressing
Crumble 2 oz of Feta cheese
Scarf.

I LOVE LOVE LOVE everyday food. It’s a fabulous magazine.
Though, I’m kind of in the same boat you are. I LOVE to cook. Absolutely adore it. Except, when I am cooking just for myself. That sucks. I hate eating the same thing over and over again.
So, I shall be watching this space, and see what you come up with, and I tend to post the odd recipe now and then on my page too, so I’ll let you know if I come up with anything ingenious.

I can do left overs for a day or two but then after that? Blech. I have this same problem as a woman living alone.

Well I’m one of those people with a picky husband so most casseroles are out of the question. So I ended up most nights making a meat, a veg, and a starch. So you can always just buy however many chicken breasts you need. I love to marinate chicken breast in peach preserves and teriyaki and then grill them. Or cook them in a pan/oven.
And there is this rice by Steamfresh that comes in brown or white and microwaves in 3-4 mins. So while this isn’t really a recipe, it’s something.

I had the same problems when I was single…it was hard to cook for one.
All of my recipes now are pretty huge, but I’m looking forward to seeing what you come up with :)

I’ve started eating Lean Cuisines frozen dinners when Officer Hubster is on night shift. They have lots of fresh veggies in them and taste pretty good, surprisingly. I hate cooking for myself, too.

I’m partial to frozen dinners since I don’t like to cook for picky kids.

I may be married, but I usually eat dinner alone- Aaron works until 8 or so and I would die if I had to wait until then to eat. I rarely cook for this reason, but when I do, I usually make a big pot of soup or something. I’m totally boring.

Well I only cook for two these days but I feel like I feed an army Tobin eats so much but I love new recipes. When I cooked for myself I did a lot of fun quasadilla’s you can put almost anything in them tons of veggies, beans, meats, etc. I also did different bakers recipes so I would make a baked potato and put broccoli and cheese, grilled chicken, black beans, etc. on top. If you are looking for quick easy stuff go to your grocery stores meat dept and just buy meat for 1 and then you can season it any way you like. Hope this helps my love!!!

I would suggest finding recipes that feed 4, then cutting in half. It is a lot easier to figure the amounts in your head. Don’t be afraid to recalculate the amounts in the recipe. It doesn’t get much easier than cutting something in half. :)

Oh my goodness, yes. Kasey and I are always cooking for two because we really don’t need leftovers. I have a cookbook at home with some really delicious recipes for two. It’s actually from those homeshow people, The Pampered Chef. Anyway, when I get home I’ll get you some of the recipes I like the best. :) No reason you shouldn’t be eating good food.
